Utah’s weather can be a little crazy…one day it’s 45 degrees, while the next it’s 80. However, you will find that once we’ve had one warm day here, we all pretend that it’s summer.
Though it was a colder day outside, we’re dining like it’s in the 90’s.
Summer Tortellini Salad Recipe
Summer sausage (you could use something stronger, I am just not a spice girl)
Cook and drain cheese tortellini. (I like to add just a touch of EVOO to the water to ensure that the tortellini noodles don’t stick.)
Mix tortellini, peppers, tomatoes and summer sausage with Italian dressing to taste.
Add a little chopped basil and some grated parmesan cheese.
I love this summer tortellini salad because it takes minutes to make and it’s so delicious!
What’s your favorite summer salad?
